Quinoa with Edamame, Ginger, and Lime

Recipe from a fantastic book called The Longevity Kitchen


2.5 cups vegetable broth
1/2 tsp salt
1.5 cups red and/or white quinoa, rinsed under cold water and drained
1 tsp fresh grated ginger
pinch of cayenne
1 cup fresh or frozen edamame beans mixed with dash of salt and lime juice
1/2 cup diced red bell pepper
2 scallions, white and green parts finely chopped
2 tbs chopped fresh mint
2 tbs chopped fresh cilantro, basil, or parsley
2 tbs extra virgin olive oil
2 tbs freshly squeezed lemon juice
2 tbs freshly squeezed lime juice
1 tbs grated lime zest
1 tbs grated lemon zest

1) Put the broth and 1.4 tsp of the salt in a large saucepan and bring to boil over high heat. Stir in the quinoa. Decrease the heat to low, cover, and cook for 15-20min until the water is absorbed.
2) Remove from the heat. Add the ginger, cayenne, and remaining salt and fluff with fork until well combined. Transfer the quinoa to a bowl and let cool to room temperature.
3. Add the edamame, red pepper, scallions, mint, cilantro, olive oil, lemon juice, lime juice. lemon zest, and lime zest and stir well until combined.
